This delicious and comforting casserole is super comforting and satiating - while consisting mainly of just veggies and nuts.

Crazy, but also awesome.

Potatoes, broccoli, and lots of cashew cheese sauce to go along with it... cannot go wrong with these ingredients.

As always, wholesome, simple, and oil-free. Plus, it's naturally gluten-free and totally vegan, of course.
